How do I enable User Defined fields?

Question
There are a number of user defined float fields in sales orders and quotes; and user defined float, string and date fields in purchase orders that are not editable.
How do I unlock them or make them editable?
Answer
You need a custom plugin to make these fields editable.
Attached are some examples of plugins that do this.
